native breed pulled pork

one of the us barbecue classics. native breed pork shoulder [known as pork butt stateside] sourced from philip warren in cornwall, coated in salt and pepper before being smoked for 12-15 hours. pulled to order before being mixed mixed with rendered fat and maldon sea salt. served with mustard barbecue sauce and pickled cucumbers.

mustard barbecue: onion, garlic, cider vinegar, apple juice, sugar, cumin, chilli, black pepper, ketchup, american mustard, chilli pickle brine. 

pickled cucumber; vinegar, sugar, garlic, chilli, shallots.
