pulled pork bun, green chilli slaw

a dish that we have been doing since our street food / festival days [2013].

we toast a light milk bun to soften it, brush with mustard barbecue sauce on the bottom half and brush with beef dripping on the top half. the bun Is filled with pulled pork and garnished with a punchy ginger + green chilli slaw and pickled cucumber, adding both texture and big flavours.

mustard barbecue: onion, garlic, cider vinegar, apple juice, sugar, cumin, chilli, pepper, ketchup, mustard, pickle brine, 

ginger + green chilli slaw: sliced white cabbage, mayonnaise, soya sauce, ginger, garlic, green chillis, fish sauce, coriander.
