method | Beef brisket trim and pork fat minced on a course grind, then seasoned with marjoram, coriander seeds, juniper berries, black pepper and garlic powder. The whole is minces again to ensure the ingredients are properly blended, and shaped into a sausage with a natural case

After resting a night in the fridge the sausages are smoked for about half an hour and grilled on order

Served with chilli sauce and sour kraut made from the broccoli stalks
