gochujang wings, crispy shallots, coriander

crispy, sweet and sour, umami. the best wings generally have a caramel base. ours are no different.

the wings are first smoked, then battered and deep fried to order to make them extra crispy. after frying they are tossed in a caramel [browned sugar and water] which we spike with vinegar [sweet and sour] and gochujang for a punch of heat. finally, they are garnished with fried shallots, fresh coriander, spring onion. a lime wedge on the side which we recommend which cuts through the sweetness of the sauce.
